Most of us reach for ginger tea with honey at the first sign of a cold, but you may have heard that honey loses its properties in hot tea.
There are many myths about honey. Do you know what it really is?
Crystallized honey ceases to be of good quality
Crystallization is a natural property of honey and proof that it is of high quality and has not been tampered with.
"The crystallization time of honey depends on the ratio of fructose to glucose. The higher the proportion of fructose in honey, the later it crystallizes."
Crystallized honey can only be dissolved
If honey has crystallized at home, it can either be carefully liquefied by heating it to 45 °C, or pasteurized.
To do this, place the honey in a large container, grind it mechanically and stir it regularly with a stainless steel whisk about 3 times a day for several days. After a few days, you will see how the honey changes its consistency and becomes creamy.
Honey does not require special storage.
Honey does not like light and high temperatures, so it should be stored at a temperature of up to 25 °C, in a dark and dry place. It can be kept in a pantry or even in the refrigerator.
Honey is hygroscopic and absorbs moisture from the air, and therefore odors, so make sure the jar is always tightly sealed to avoid contamination by moisture from the outside environment.
Honey cannot go bad
Honey's long shelf life is due to its high content of simple sugars, low water content and antibacterial properties.
However, if the honey is of poor quality and has a high water content, it may begin to ferment, so buy only high-quality honey that has undergone strict composition control, which includes checking the physical and chemical composition of honey, the absence of antibiotics, pesticides and other substances that have no place in honey.
Honey in hot tea loses all its vitamins
Normally brewed tea has a temperature of 80-90°C, but when a spoonful of honey is added and stirred, the temperature of the tea drops sharply.
At the same time, the temperature load on honey is not so high and long that honey and its useful properties are completely destroyed. Never boil honey in tea.
