Vegetable oils are a product that is included in many healthy diets.
At the same time, it has become overgrown with a number of myths that in fact have no relation to reality.
Journalists from the publication aif.ru spoke with Doctor of Biological Sciences Vladimir Bessonov, who dispelled popular myths and named the oil that reduces cholesterol levels in the blood.
Common myths
Carcinogenicity of vegetable oil. It is believed that when frying, vegetable oil forms carcinogens. However, for potentially dangerous compounds to appear, the cooking temperature must reach 210-240 degrees.
Increased cholesterol. It is believed that vegetable oil increases cholesterol. In fact, it contains substances that, on the contrary, reduce it: we are talking about phytosterols.
Lack of vitamins. Liquid oils contain omega-6 polyunsaturated acids (sunflower oil), omega-3 polyunsaturated fatty acids (linseed oil), etc.
Olive oil is the healthiest. In fact, this is just the clever work of marketers. Bessonov emphasized that olive oil does not contain any unique substances: for example, it contains oleic acid, but it can be obtained from other products.
