How to tenderize beef
The key to successfully cooking tough meat is following the technology.
First, the beef needs to be cut correctly. This is done across the grain to disrupt its structure and make the meat softer.
Secondly, the meat needs to be pounded. Thinner pieces of beef will cook much faster.
Thirdly, the beef needs to be marinated properly. Dry red wine, vinegar with onions, ketchup or kefir are best.
And if you don’t have time to marinate, just coat each piece with mustard before cooking, which quickly softens the beef and gives it a piquant flavor.
