How to replace starch in cutlets

Potato starch is an ingredient that is added to cutlets so that they do not fall apart when fried and turn out juicy and elastic.

However, if you don't have starch on hand, you can successfully replace it with eggs. 1 chicken egg is enough to make the cutlets juicy and not fall apart when fried. If you add more, the mixture will be too liquid.

Potato starch can also be successfully replaced with corn starch, but you will need 1.5 times more of the latter.

If you don't have potato starch on hand, raw potatoes can be used as a substitute. All you need to do is grate the vegetable and add it to the mince.

Bread or oatmeal will also help. In the first case, the crumb should be soaked in milk, in the second - chopped in a blender and added to the mince.
