What to add to the dough
The main secret is that the dough for vareniki should be pliable. Otherwise, instead of an appetizing vareniki, you will get something unappetizing with the filling leaking out.
That is why experienced cooks add vegetable oil to the dough. Just a few drops are enough to make the mass more pliable and elastic.
Dough with the addition of vegetable oil is what makes the right dumplings, in which even the most liquid filling is preserved.
It is important to follow three more rules:
- the thickness of the dough should be at least 2 millimeters;
- flour must be of the highest quality;
- Before kneading the dough, it must be sifted.
