Eggplants are delicious seasonal vegetables that can be used to prepare a variety of dishes.
Fans of Soviet classics have probably wondered how to prepare the dish from the film “Ivan Vasilyevich Changes Profession,” proudly presented in it as “overseas eggplant caviar.”

Eggplant caviar: recipe
To prepare the snack you will need the following set of products:
- 2.5 kilograms of eggplants;
- 500 grams of bell pepper;
- 900 grams of onions;
- 150 milliliters of vegetable oil;
- 6 cloves of garlic;
- 100 grams of tomato paste;
- 2 teaspoons of salt and 1 teaspoon of sugar;
- 2 teaspoons vinegar;
- pepper to taste.
Bake the eggplants and peppers in the oven for half an hour, chop and fry the onion in a frying pan, add tomato paste and simmer for 5 minutes.
Cut the eggplants and peppers into cubes, place them in a saucepan, add the onion and simmer for 10-15 minutes.
Add the remaining ingredients to these: chopped garlic, salt, sugar and vinegar, simmer for another 15 minutes. Blend the resulting mixture until smooth and place in sterilized jars.
