A properly selected marinade for shashlik helps make it juicy and tasty.
But adding some ingredients can, on the contrary, only spoil the dish.
Chef Yulia Arkhipova spoke about this in more detail.
What not to add
You shouldn't add vinegar to the marinade for shashlik. It's very easy to overdo it with this ingredient.
As a result, the meat may acquire an unpleasant sour taste.
It is better to replace it with lemon. Thanks to this, the meat will be soft and tasty. But with all sour ingredients, it is important to observe moderation.
It is not recommended to marinate meat in fatty mayonnaise. Such a combination will have a negative effect on your health and figure.
Some also use kefir for the marinade. But with this ingredient, not everything is so simple.
Thanks to this marinade, the shashlik comes out quite juicy. But it should be taken into account that the combination of meat and kefir can interfere with the absorption of protein.
You should also not add salt to the marinade right away. This ingredient can "pull" moisture out of the meat. As a result, the shashlik will be dry.
