Ingredients
A healthy analogue of the sauce is prepared from:
- 1 egg;
- 1 medium avocado;
- 250 milliliters of vegetable oil;
- 1 tablespoon lemon juice;
- 1 teaspoon mustard.
Break an egg into a tall glass, pour in the oil and add salt to taste. Take a hand blender and mix the three ingredients until smooth.
Add avocado cut into small pieces to the resulting mixture, pour in lemon juice and add mustard. Blend the mixture again.
As a rule, 30 seconds is enough for the resulting mixture to reach the desired consistency.
After cooking, transfer the avocado mayonnaise into a container and place the resulting sauce in the refrigerator.
