On the eve of the New Year holidays, housewives often think about how to make holiday dishes healthier.
In particular, Olivier salad, herring under a fur coat and mimosa can be prepared without a gram of mayonnaise, but they will be no less tasty than usual.
Culinary expert of TUT NOVOSTI, chef and fourth-class baker Yulia Arkhipova will tell you culinary tricks that will help lighten the New Year's table.
How to Make Salads Healthier
When preparing Olivier, by replacing a few ingredients you can get a hearty and low-calorie dish.
First, replace the cooked sausage with boiled turkey or chicken breast, and instead of mayonnaise, season the salad with a mixture of Greek yogurt, Dijon mustard and herbs.
As for the traditional herring under a fur coat, it is recommended to bake the vegetables for it, rather than boil them: this way the taste will be more intense. For the dressing, mix olive oil, lemon juice and French mustard.
To prepare mimosa, use boiled or baked fish: this way the dish will be healthier.
And replace the mayonnaise in it with a mixture of whipped low-fat cottage cheese, sour cream, herbs and garlic pressed through a press.
