Fresh bread

It will make the cutlets dense and rough. Instead, you can use soaked breadcrumbs. They will help to preserve the juiciness.
You can also pre-dry the bread and soak it in water.
Raw egg and mayonnaise
Egg whites can curdle during cooking, which can cause the dish to end up tough.
Mayonnaise is also an unnecessary ingredient in minced meat for cutlets.
It is believed that it can add juiciness to a dish. But this ingredient, on the contrary, will lead to the opposite effect.
Therefore, it is better to simply knead the minced meat thoroughly and beat it well.
Spices and garlic
Be careful when adding spices to the minced meat. If you overdo it, they will ruin the taste of the dish.
