1. Peel and core the pears, then cut them into quarters.

2. Place the pears and lemon juice in a saucepan. Cook over moderate heat.

3. Beat the pears with a blender.

4. Add cinnamon or vanilla, honey, and liquid to the pear mixture.

5. Cook the fruit over moderate heat, stirring constantly.

6. Pour the pear oil into jars.

7. Pour the hot pear oil into prepared glass jars.
