Radishes are a traditional ingredient in the popular summer dish called okroshka.
However, this vegetable disappears quite quickly, and sometimes it is impossible to find it in stores or at the market.

So, if you don’t have radishes on hand, this is not a reason to cook any other dish.
In fact, there are analogues of this vegetable that are not inferior to it in taste. First of all, we are talking about daikon: this exotic name is given to a vegetable that is also called Chinese radish.
Also, radish in okroshka can easily be replaced with turnip or rutabaga.
If you couldn't find these vegetables either, then there is another fairly simple life hack on how to make your okroshka juicy. Just add twice as much cucumber as the recipe calls for, and the soup will be juicy and crispy.
